First Course
Freshly shucked oyster, pickled orange, red onion, cracked peppercorn
Charred octopus, polenta crisp, citrus aioli

Beetroot cured kingfish, gin-compressed watermelon, whipped goat’s curd, pickled fennel, finger lime, beetroot powder

Third Course
Five-spice brined duck breast, carrot purée, orange gel, fresh orange, duck jus

Juniper and rosemary crusted venison loin, parsnip purée, roasted beetroot, blackberry jus
