with Orange Brandy Sauce
The pudding features an array of native ingredients: the hero of course is the “wild or desert peach” – the quandong, along with rich and creamy macadamia nuts and “Judas the Dark”, a wonderful ale from the Woolshed Brewery in SA. It is made with roasted wattle seed, lending a nutty coffee flavour to the ale. These native flavours marry beautifully with an indulgent orange brandy sauce.
