Monina Gilbey, our Biodiversity Manager, is busy working with Andrew Fielke to harvest and prepare Saltbush berries, Olearia, Scented Lemon Grass, Samphire and Karkalla stems ready for Friday night.
We are excited to announce Kangaroo Island Spirits are supporting the night with their O’Gin. Their award winning gin uses the coastal daisy bush found on our course, Olearia, and imparts sweet piney notes. Paired with soda water, Oleria and a slice of orange, this will be the perfect way to start the evening.
